this is a crazy easy recipe and can all be made in your crock pot! and while it's sweet potato based, it definitely has a pumpkin feel to it. it's warm, and cozy and hits the spot during those cold winter days! and it also hits the spot for quick, simple and easy with only a few ingredients!!!
start by pealing and chopping up 2-3 medium sized sweet potatoes into chunks. throw directly into the crock pot. peel and then add 2-3 whole garlic cloves, again, right into the crock pot.
there are a lot of recipes out there (and i am sure they are good too!) that have you add a ton of other stuff - apples, carrots, onions, celery - sometimes i just don't have all those goodies laying around to throw in here. if you do, go for it! add away! but while mine lacks all of those additional items, it still delivers on bold flavor.
i then add my spices:
- 1 teaspoon dried oregano
- 1/2 teaspoon cumin
- 1/2 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
once the spices were added, i threw in 2 cups of water and 1 cup of vegetable broth (you could use chicken here if you'd like) and threw the crock pot onto HIGH for 4 hours - after all this was my lunch for the day! 4 hours later, the potatoes were cooked through and it was ready to purée! using my immersion blender, i made the whole thing silky smooth. and this is also where i added my 1 can of full fat coconut milk!
once the mixture heated for about another 30 minutes on warm in the crock pot, i threw some into a bowl and topped with some roasted pumpkin seeds and just like that, lunch was ready!
Easy Sweet Potato Soup with Coconut Milk
Makes 5 Servings
Ingredients:
- 1-2 lbs sweet potatoes
- 1-3 cloves of garlic
- 1 teaspoon dried oregano
- 1/2 teaspoon cumin
- 1/2 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2-3 cups of water
- 1 cup of vegetable broth
- 1 can full fat coconut milk
- 1-2 teaspoons roasted pumpkin seeds (optional)
Directions:
- peel and cut sweet potatoes into chunks and put into crock pot
- peel and add garlic cloves to crock pot
- add spice mixture to crock pot
- add water and vegetable broth to crock pot
- set on HIGH for 4 hours
- after 4 hours, purée everything together in the crock pot
- stir in 1 can of coconut milk and leave on warm for 30 minutes
